Muesli Energy Balls

Ingredients

  • 150g pitted dates
  • 1/3 cup (95g) hazelnut, cashew and cacoa nut butter
  • 2 cups (250g) Sunsol – Toasted Muesli, almond, cashew and chia

Method

Step 1

Blend or process dates until smooth. Add nut butter and process until combined. Add Sunsol Toasted Muesli and pulse until just combined (you don’t want to blend up the muesli).

Step 2

Roll tablespoons of mixture into balls. Place in an airtight container and chill for 1 hr until firm.

Tip – for an extra indulgent snack, dip balls into dark chocolate and chill until set.

Frozen Yoghurt Bark with Berries and Granola

Ingredients

  • 1½ cups (420g) Farmers Union Greek yoghurt
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • pinch ground cinnamon
  • ¼ cup (45g) blueberries, halved
  • 4 strawberries, chopped finely
  • ½ cup (65g) Sunsol Granola – almond, pink lady apple and cinnamon

Method

Step 1

Line a 30 x 25cm tray with baking paper. In a bowl, combine yoghurt, honey or maple syrup, vanilla and cinnamon; mix well.

Step 2

Spread evenly onto prepared tray. Sprinkle over blueberries, strawberries and Sunsol granola.

Step 3

Freeze for 3-4 hrs until frozen. Cut into pieces and serve immediately.

Choc Nut Muesli Slice

Ingredients

  • 125g pitted fresh dates
  • ½ cup (140g) natural peanut butter or other nut spread
  • 1/3 cup (90g) honey
  • 3 cups (360g) Sunsol Toasted Muesli – almond, honey and dark chocolate
  • 50g dark chocolate melts, melted

Method

Step 1

Grease a 20 x 30cm slice pan. Line base and two long sides with baking paper, extending paper 2cm above edge of pan.

Step 2

Place dates in a small food processor and process until finely chopped. Add peanut butter and honey and pulse until just combined. Transfer mixture to a bowl with Sunsol Toasted Muesli and mix until well combined. Spread evenly into prepared pan and smooth top.

Step 3

Cover and chill for 1 hr until firm. Drizzle top with dark chocolate. Chill 5 mins until set. Cut into squares.

Tip – Store in an airtight container in the fridge for up to 1 week.

Breakfast Berry and Granola Parfait

Ingredients

  • 1 cup (280g) Farmers Union vanilla bean Greek yoghurt
  • 2/3 cup (75g) Sunsol - High Protein Granola Choc Almond
  • 4 strawberries, halved, sliced
  • ¼ cup blueberries
  • ¼ cup raspberries

Method

Step 1

Spoon ¼ cup of yoghurt into two glasses. Top with half of the Sunsol – High Protein Granola.

Step 2

Top with half of the fruit then remaining yoghurt. Sprinkle tops with remaining granola and fruit. Serve immediately or chill for up to 3 hrs.

Tip – Frozen berries also work well if you want to make ahead and chill for later.
